Dish #23: Bridget's Gazpacho
THE RECIPE: Grilled Tomato-Bell Pepper Gazpacho Gazpacho is a wonderful way to mark the winding down of the season. Summer ending still makes me sad. Which is funny because my life doesn't vary much seasonally these days. October is not all that different from June, in terms of my day-to-day, and yet that end of summer melancholy lingers. But don't worry, this gazpacho is sufficiently time consuming to distract you from your residual school starting blues. The recipe says: It's a great way to finish those tomatoes you have "at the ready." I'm sure that's true for some people. I, however, do not have any tomatoes laying around. I don't even have a dirt patch in which to begin to grow tomatoes that could at some point be considered "at the ready." No worries, the grocery store has plenty.
Dish #22: Bridget's Barbecued Brisket
THE RECIPE: Barbecued Texas Beef Brisket Earlier this week I told the folks at Bon Appetit that "low and slow grilling makes me want to die." This recipe may have helped me change my mind about that. I have expressed (during the short ribs) that I do not like "marathon style" grilling, and for good reason. The thing is, this style of cooking is not practical for non-home owning young people. No offense to anyone, but spending 10 hours in front of a smoker is near impossible if you live in an apartment. Or do not own non-essential cooking devices like a smoker. Luckily, I was visiting my parents at their sunny home on Balboa Island when I got this assignment. And it's a good thing, because it takes a village to make this brisket. Or at least an entire family. In this case, the Moloney family.
