I absolutely love cheese, and of course it needs to be accompanied by a great glass of wine!!

Help!  I'm hosting a dinner party and I want to serve a cheese course, for people who may not appreciate a good pungent, stinky cheese.  I'm looking for three or four cheeses, that won't bore but aren't too scary for cheese novices.  What should I serve?  As the drinks I'm serving Prosecco or Champagne.
