But instead of scrounging frantically through your refrigerator for something with which to impress your lucky guest, whip up something gourmet, whether you point-click-buy, DIY, or do what we recommend: a bit of both. The highlight of any romantic repast is, of course, the chocolate – so unleash your efforts at cooking wizardry on dessert, and for the meal itself, bring in the pros.

Dark Chocolate Mousse
(recipe adapted from Lindt.com)

Ingredients:
- 100g Lindt Excellence 70% Cocoa Plain Chocolate (or Extra Creamy Milk Chocolate). Available at http://www.lindt.com
- ½ Cup Cream

Instructions:
- Heat the cream quickly until it comes to a boil and remove from heat.
- Break the chocolate into small pieces and add to the cream, stirring until the chocolate has completely melted.
- Refrigerate overnight or for a minimum of 3- 4 hours.
- Whip the mousse with a whisk until fluffy.
- Use an icing bag to pipe the mouse onto plate. For extreme decadence, pipe directly onto squares of milk or dark chocolate.
- Garnish with grated chocolate.


Spiced White Chocolate Chai
(Serves 4-5)

Ingredients:
- 2 cups water
- 2 chai tea bags
- 2 cups milk
- 3.5 ounces Lindt white chocolate, chopped
- 1 teaspoon vanilla extract
- ¼ cup Grand Marnier liqueur (optional)

Instructions:
- Bring water to boiling, add tea bags & steep five minutes. Discard tea bags.
- Heat milk until steaming.
- Place chocolate in a small bowl, and pour in ¼ of steaming milk, stirring until chocolate is melted.
- Stir chocolate mixture into hot milk; add chai and vanilla extract & serve hot in tea glasses, adding Grand Marnier if desired.
