                                              1. Smoked Salmon

                                                Smoked Salmon

                                                4 Salmon Fillets
                                                1/4 cup salt
                                                1 quart wter
                                                1 tablespoon dired tarragon

                                                Fill water pan 2/3 full with liquid.  Mix water and salt until salt dissolved.  our into large baking dish or other shallow container.  Arrange fillets, cover, and refrigerate for several hours (preferably overnight).  Immediately before preparing smoker, lift fish from brine and arrange on wire racks to air dry for 30 minutes.  Grease cooking grill with olive oil.  Arrange the salmon in a single layer on the grill, leaving spaces between the pieces.  Add taragon to 2/3 full water pan.  Smoke cook until the salmon flakes with a fork (1-2 hours).
                                              2. Breakfast Casserole

                                                INGREDIENTS:

                                                6(ish) eggs (the more the merrier)
                                                Whatever you love in your eggs
                                                1 Canister Pillsbury Crescent Rolls

                                                Scramble up your eggs with your favorite ingredients (I prefer cheese, green onions, cheese, garlic, cheese, mushrooms, and cheese) until just about done (about a minute less than you usually would).

                                                Lay out the crescent rolls onto a cookie sheet.

                                                Put the scrambled egg mixture on top, in the center, of the crescent rolls.

                                                Roll up the sides of the crescent rolls over the top ove the eggs, wholly wrapping them.

                                                Cook as per the instructions on the Pillsbury canister. ENJOY!


                                              3. Brown-Sugar Glazed Cornish Game Hen

                                                INGREDIENTS

                                                Beer (1 bottle per hen .. YuengLing)
                                                N cornish-game hens
                                                Brown Sugar

                                                Pre-Heat Oven to 400 degrees(F)
                                                Stuff Cornish Game Hen(s) full of brown sugar
                                                Coat the entire outside of each hen with a generous portion of brown sugar

                                                Cook for 30 minutes, periodically basting the hens with the glaze drippings
                                                Increase oven temperature to 450 degrees(F) and cook for a further 10-15 minutes
                                                You will know when it is done by the ridiculously delicious smell coming from the oven

                                                EAT!
